The sulfur amino acid, cysteine, plays an essential role in maintaining cellular redox potential and is a key constituent of the antioxidant, glutathione. Cysteine is highly reactive and readily oxidizes to the disulfide form, cystine, producing oxygen radicals as a by-product.
